The Recipe is done separately in two parts, the internal fillings and the external skin.
食谱分为两个主要步骤,制作内层馅料和外层皮。

The ingredient for the internal filling of the Purple Sweet Potato Spiral Mooncakes.

▶️ Fillings 馅料
Salted Egg Yolks 咸蛋黄 5 pcs
(浸米酒,食用油)
(soaked in rice wine, cooking oil)
Melon Seeds 瓜子 45g

Preheat oven to 180°C and bake around 5 minutes.
烤箱预热至 180°C,烘烤约 5分钟。

Below is the two option that you can deal with the filling, option 1 is filling with salted egg, option 2 is filling without salted egg.

Filling 1 (馅料 1)
Red Bean Paste 豆沙馅 150g (5 x 30g)
(Mix with Melon Seeds, 与瓜子混合)
(Then add in salted egg yolk)
(之后再加咸蛋黄)

Filling 2 (馅料 2)
Pandan Red Bean Paste 班兰豆沙馅 200g
(5 x 40g)
(Mix with Melon Seeds, 与瓜子混合)
(without salted egg yolk)
(没有咸蛋黄)

After the internal filling is ready, now proceed to make the outer skin layer.
过后就是制作月饼的外陈皮。

You need to prepare and mix well the two separate dough which represents two different color.

▶️ Water Skin Dough 水皮面团
Plain Flour 普通面粉 115g
Icing Sugar 糖粉 25g
Salt 盐 2g
Water 水 50ml
Butter 牛油 40g

▶️ Oil Skin Dough 油皮面团
Plain Flour 普通面粉 125g
Purple Sweet Potato Powder 紫薯粉 12g
Butter 牛油 75g

Place the purple dough on top of the white dough, engulf into a ball shape, roll and fold several time, then wait for 30 minutes for the dough to settle down.
把紫色的面团放在白色的面团上,圆包,展平几次,然后等候30分钟。

Cover the internal filling with the dough skin, and make a spiral sphere.
把馅料用外皮包围成球形。

Purple Sweet Potato Spiral Mooncakes.

Preheat oven to 170°C and bake around 30 minutes.
烤箱预热至 170°C,烘烤约 30 分钟。

Let it room cooled and serve it to your love ones.
