Japan Hokkaido Cupcakes Recipe

Wishing to have a Japanese Hokkaido Cupcakes doesn’t meant you need to go to Japan, but what if you can make one at home at your comfort zone ?

These Simple delicious Japan Hokkaido Style cupcakes recipe you can try at home. The cupcakes are cream filled and topping with Zespri Green & SunGold kiwi fruits.

First get your self Zespri Green & SunGold kiwi fruits, then peel off the hairy outer skin, cut them into equal slices.

Make the cupcake base using the following material:

  • 80g self-raising flour, sifted
  • 40g caster sugar
  • 6 egg yolks
  • 60ml orange juice
  • 1tsp grated orange rind
  • 60ml corn oil

Mix all of the above ingredients into a mixing bowl, stir them in one direction till well mixed.

Next is making the whisk egg whites with the following:

  • 6 egg whites
  • 1/2 tsp cream of tatar
  • 70g caster sugar

Whisk egg whites with cream of tatar till foamy, add caster sugar slowly and whisk.

Combine both and mix thoroughly and smoothly.

Fill the cupcake base mixture into paper cups till nearly 80% full and bake in a pre-heated oven at 160 degree Celsius till baked golden brown, usually around 20-25 minutes. Leave it cool in room air.

 

Next is to prepare whipping cream. Prepare 200g whipping cream and whisk whipping cream till stiff. Put into a piping bag fitted with round nozzle. Push nozzle into the center of the cake and pipe cream inside until full.

Please note that you will need to pipe in the whipped cream as soon as the cupcakes have cooled down. This is to prevent them from shrinking.

Finally add some decoration pieces with the following :

  • 2tbsp icing sugar
  • strawberries,kiwi fruits or grapes.

Sprinkle top with an icing sugar, arrange sliced kiwi on top as decoration.

Chill in the fridge for at least 1 hour before serving.
