A great pasta meal where you can cook by adding pasta in a large pot of salted water boiled for 4 minutes until dented. Drain the pasta, reserving 1/2 cup of pasta cooking water to set aside.
Melt the butter, add some pine nuts and stir to cook until golden brown in color for about 10 minutes. Transfer pine nuts to a bowl with a slotted spoon. Crack an egg and cook until whites are set but yolks are still runny, spooning butter over yolks. Pour in some of the reserved pasta water to create a sauce, seasoning with salt and pepper. Transfer pasta & eggs to a plate and serve. Sprinkle with pine nuts, Parmesan, and nutmeg.
