Pumpkin spice cupcakes with icing, recipe by Louberry via Living Lou. The making of these icing cupcakes consist of two parts of recipes. The cupcakes part and the icing part. The cupcakes are made from blended pumpkin, sugars (granulated & brown) and canola oil in a bowl. Add in one egg at a time once mixed waiting for the mixture blending thoroughly after each addition, add in flour if needed. After that, the batter is scooped out and dropped into baking cups for baking for approximately 18 to 20 minutes. Test with a toothpick until it comes out clean. The icing is made from cream cheese, butter, vanilla, and icing sugar blended together as topping.
